Colorful Veggie Muffins

Ingredients:

  • 1 cup whole wheat flour
  • 1/2 cup all-purpose flour
  • 1/2 cup oats
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon turmeric (optional)
  • 1/2 cup yogurt
  • 1/2 cup milk
  • 1/4 cup olive oil or melted coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup grated carrot
  • 1/2 cup grated zucchini
  • 1/2 cup finely chopped red bell pepper
  • 1/4 cup grated cheese (optional)

Instructions:

  1. Preheat the oven to 180°C (350°F). Grease a muffin tin or line with paper muffin cups.
  2. In a large bowl, mix together the whole wheat flour, all-purpose flour, oats, baking powder, baking soda, salt, cinnamon, and turmeric.
  3. In a separate bowl, whisk together the yogurt, milk, olive oil (or coconut oil), eggs, and vanilla extract.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Fold in the grated carrot, zucchini, red bell pepper, and grated cheese (if using).
  6. Divide the batter evenly among the muffin cups.
  7. Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Remove the muffins from the oven and allow them to cool.
