Colorful Veggie Muffins
Ingredients:
- 1 cup whole wheat flour
- 1/2 cup all-purpose flour
- 1/2 cup oats
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon turmeric (optional)
- 1/2 cup yogurt
- 1/2 cup milk
- 1/4 cup olive oil or melted coconut oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup grated carrot
- 1/2 cup grated zucchini
- 1/2 cup finely chopped red bell pepper
- 1/4 cup grated cheese (optional)
Instructions:
- Preheat the oven to 180°C (350°F). Grease a muffin tin or line with paper muffin cups.
- In a large bowl, mix together the whole wheat flour, all-purpose flour, oats, baking powder, baking soda, salt, cinnamon, and turmeric.
- In a separate bowl, whisk together the yogurt, milk, olive oil (or coconut oil), eggs, and vanilla extract.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Fold in the grated carrot, zucchini, red bell pepper, and grated cheese (if using).
- Divide the batter evenly among the muffin cups.
- Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Remove the muffins from the oven and allow them to cool.
