Lentil and Vegetable Buddha Bowl
Ingredients:
- 1 cup green lentils (cooked)
- 1 cup brown rice or quinoa (cooked)
- 1 carrot (shredded)
- 1 cucumber (sliced)
- 1 red bell pepper (chopped)
- 1 handful of baby spinach
- 1/2 avocado (sliced)
- 1/4 cup red cabbage (finely chopped)
- 1 tablespoon pumpkin seeds
- 1 tablespoon chia seeds
Dressing Ingredients:
- 2 tablespoons tahini
- 1 tablespoon lemon juice
- 1 clove garlic (minced)
- 1 tablespoon olive oil
- 2 tablespoons water
- Salt and pepper (optional)
Instructions:
- Cook the lentils and brown rice/quinoa according to the package instructions and let them cool.
- In a bowl, mix the tahini, lemon juice, garlic, olive oil, and water to prepare the dressing. Add salt and pepper if desired.
- In a large bowl, combine the cooked lentils and brown rice/quinoa.
- Add the shredded carrot, sliced cucumber, chopped red bell pepper, baby spinach, avocado slices, and finely chopped red cabbage on top.
- Sprinkle with pumpkin seeds and chia seeds.
- Drizzle the tahini dressing over the top and mix all the ingredients well.
This nutritious and delicious Buddha bowl makes a great option for lunch. Enjoy!
