Healthy Lentil and Vegetable Buddha Bowl Recipe

Lentil and Vegetable Buddha Bowl

Ingredients:

  • 1 cup green lentils (cooked)
  • 1 cup brown rice or quinoa (cooked)
  • 1 carrot (shredded)
  • 1 cucumber (sliced)
  • 1 red bell pepper (chopped)
  • 1 handful of baby spinach
  • 1/2 avocado (sliced)
  • 1/4 cup red cabbage (finely chopped)
  • 1 tablespoon pumpkin seeds
  • 1 tablespoon chia seeds

Dressing Ingredients:

  • 2 tablespoons tahini
  • 1 tablespoon lemon juice
  • 1 clove garlic (minced)
  • 1 tablespoon olive oil
  • 2 tablespoons water
  • Salt and pepper (optional)

Instructions:

  1. Cook the lentils and brown rice/quinoa according to the package instructions and let them cool.
  2. In a bowl, mix the tahini, lemon juice, garlic, olive oil, and water to prepare the dressing. Add salt and pepper if desired.
  3. In a large bowl, combine the cooked lentils and brown rice/quinoa.
  4. Add the shredded carrot, sliced cucumber, chopped red bell pepper, baby spinach, avocado slices, and finely chopped red cabbage on top.
  5. Sprinkle with pumpkin seeds and chia seeds.
  6. Drizzle the tahini dressing over the top and mix all the ingredients well.

This nutritious and delicious Buddha bowl makes a great option for lunch. Enjoy!
