Avocado and chickpea salad

Ingredients:

    •    1 ripe avocado, diced
    •    1 cup cooked chickpeas
    •    1 small red onion, finely chopped
    •    1 small red bell pepper, diced
    •    1 cucumber, sliced
    •    Juice of half a lemon
    •    2 tablespoons olive oil
    •    Salt and pepper to taste
    •    A few sprigs of fresh mint or parsley, chopped

Instructions:

    1.    In a large mixing bowl, combine the diced avocado, chickpeas, red onion, red bell pepper, and cucumber.
    2.    In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper.
    3.    Pour the dressing over the salad ingredients.
    4.    Add the chopped mint or parsley and gently toss all the ingredients together.
