Salmon and Roasted Vegetables

Salmon and Roasted Vegetables Recipe

Ingredients:

  • 4 salmon fillets
  • 1 large zucchini (thinly sliced)
  • 1 red bell pepper (thinly sliced)
  • 1 yellow bell pepper (thinly sliced)
  • 1 head of broccoli (cut into small florets)
  • 2 cloves garlic (finely chopped)
  • 2 tablespoons olive oil
  • 1 lemon (thinly sliced)
  • Salt and black pepper
  • Fresh rosemary and thyme (optional)

Instructions:

  1. Preheat the oven to 200°C (390°F).
  2. Season the salmon fillets with salt and black pepper on both sides.
  3. Line a large baking sheet with parchment paper and place the salmon fillets in the center of the sheet.
  4. Arrange the vegetables (zucchini, red bell pepper, yellow bell pepper, broccoli) around the salmon fillets.
  5. Sprinkle the chopped garlic over the salmon fillets and vegetables.
  6. Drizzle the olive oil evenly over the salmon and vegetables.
  7. Place the lemon slices on top of the salmon fillets and among the vegetables.
  8. Optional: Add fresh rosemary and thyme sprigs over the salmon and vegetables for extra flavor.
  9. Place the baking sheet in the preheated oven and bake for about 20-25 minutes, or until the salmon is cooked through and the vegetables are tender.
  10. Remove from the oven and serve hot.

This recipe is rich in healthy omega-3 fatty acids from the salmon and is packed with colorful vegetables, making it both delicious and nutritious. Enjoy your meal!
