Ingredients:

  • 1 cup quinoa
  • 2 cups water or vegetable broth
  • 1 avocado, diced
  • 1 red bell pepper, diced
  • 1 yellow bell pepper, diced
  • 1 cucumber, diced
  • 1 small red onion, finely chopped
  • 1 handful cherry tomatoes, halved
  • 1/4 cup fresh parsley, finely chopped
  • 1/4 cup fresh mint, finely chopped

For the Dressing:

  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon apple cider vinegar
  • 1 garlic clove, minced
  • Salt and pepper to taste

Instructions:

  1. Cook the Quinoa:

    • Rinse the quinoa thoroughly in a fine mesh sieve.
    • Bring 2 cups of water or vegetable broth to a boil in a medium saucepan.
    • Add the quinoa, stir, and cover the pan.
    • Reduce the heat to medium and simmer for about 15 minutes, or until the quinoa has absorbed all the liquid.
    • Remove from heat and let it cool.
  2. Prepare the Vegetables:

    • Dice the avocado, red bell pepper, yellow bell pepper, and cucumber.
    • Finely chop the red onion and halve the cherry tomatoes.
  3. Make the Dressing:

    • In a small bowl, whisk together the olive oil, lemon juice, apple cider vinegar, and minced garlic.
    • Season with salt and pepper to taste.
  4. Assemble the Salad:

    • In a large salad bowl, combine the cooled quinoa with the diced vegetables, fresh parsley, and fresh mint.
    • Pour the dressing over the salad and toss well to combine.
  5. Serve:

    • Serve the salad immediately and enjoy!
