Quinoa and Avocado Vegetable Salad
Ingredients:
- 1 cup quinoa
- 2 cups water or vegetable broth
- 1 avocado, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 1 cucumber, diced
- 1 small red onion, finely chopped
- 1 handful cherry tomatoes, halved
- 1/4 cup fresh parsley, finely chopped
- 1/4 cup fresh mint, finely chopped
For the Dressing:
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- 1 tablespoon apple cider vinegar
- 1 garlic clove, minced
- Salt and pepper to taste
Instructions:
Cook the Quinoa:
- Rinse the quinoa thoroughly in a fine mesh sieve.
- Bring 2 cups of water or vegetable broth to a boil in a medium saucepan.
- Add the quinoa, stir, and cover the pan.
- Reduce the heat to medium and simmer for about 15 minutes, or until the quinoa has absorbed all the liquid.
- Remove from heat and let it cool.
Prepare the Vegetables:
- Dice the avocado, red bell pepper, yellow bell pepper, and cucumber.
- Finely chop the red onion and halve the cherry tomatoes.
Make the Dressing:
- In a small bowl, whisk together the olive oil, lemon juice, apple cider vinegar, and minced garlic.
- Season with salt and pepper to taste.
Assemble the Salad:
- In a large salad bowl, combine the cooled quinoa with the diced vegetables, fresh parsley, and fresh mint.
- Pour the dressing over the salad and toss well to combine.
Serve:
- Serve the salad immediately and enjoy!
