Delicious Vegan Olive Oil Artichokes

Olive Oil Artichokes Recipe

Ingredients:

  • 6 artichoke hearts
  • 2 carrots
  • 2 potatoes
  • 1 cup peas (frozen or fresh)
  • 1 onion
  • 4 tablespoons olive oil
  • Juice of 1 lemon
  • 1 cup water
  • 1 teaspoon salt
  • 1 teaspoon sugar
  • 1/2 bunch dill (for garnish)

Instructions:

  1. Preparation:

    • Dice the carrots and potatoes into small cubes.
    • Finely chop the onion.
  2. Cook the Vegetables:

    • In a large pot, heat the olive oil and sauté the onion until soft.
    • Add the carrots and potatoes and sauté for a few more minutes.
  3. Add the Artichokes:

    • Add the artichoke hearts to the pot.
    • Add the peas as well.
    • Pour in the lemon juice, water, salt, and sugar.
  4. Cooking:

    • Cover the pot and cook on low heat for about 20-25 minutes, until the vegetables and artichokes are tender.
  5. Serve:

    • Transfer the cooked artichokes to a serving plate.
    • Garnish with finely chopped dill.
    • Serve the olive oil artichokes cold.
