Vegan Lentil Koftes
Ingredients:
- 1 cup red lentils
- 2 cups water
- 1 cup fine bulgur
- 1 large onion, finely chopped
- 2 tablespoons olive oil
- 2 tablespoons tomato paste
- 1 tablespoon pepper paste
- 3-4 green onions, finely chopped
- Half a bunch of parsley, finely chopped
- 1 teaspoon cumin
- 1 teaspoon black pepper
- 1 teaspoon red pepper flakes
- Salt, to taste
- Lemon wedges (for serving)
- Lettuce leaves (for serving)
Instructions:
Cook the Lentils:
- Place the lentils in a pot, add water, and bring to a boil.
- Cook the lentils until they are soft and have absorbed most of the water, about 15-20 minutes.
- Add the fine bulgur to the cooked lentils, stir, and cover the pot. Let it sit for the bulgur to absorb the remaining moisture and swell.
Sauté the Onion:
- In a separate pan, heat the olive oil and add the finely chopped onion.
- Sauté the onion until it becomes golden brown.
- Add the tomato paste and pepper paste, and cook for a few more minutes.
Mix Ingredients:
- Add the sautéed onion and paste mixture to the lentil and bulgur mixture.
- Add the finely chopped green onions, parsley, cumin, black pepper, red pepper flakes, and salt.
- Mix and knead the mixture well until everything is combined and the flavors meld together.
Shape the Koftes:
- Take small portions of the mixture and shape them into small oval patties.
- Place the koftes on a serving plate.
Serve:
- Serve the lentil koftes with lemon wedges and lettuce leaves.
- Enjoy your meal!
