Vegan Lentil Koftes

Ingredients:

  • 1 cup red lentils
  • 2 cups water
  • 1 cup fine bulgur
  • 1 large onion, finely chopped
  • 2 tablespoons olive oil
  • 2 tablespoons tomato paste
  • 1 tablespoon pepper paste
  • 3-4 green onions, finely chopped
  • Half a bunch of parsley, finely chopped
  • 1 teaspoon cumin
  • 1 teaspoon black pepper
  • 1 teaspoon red pepper flakes
  • Salt, to taste
  • Lemon wedges (for serving)
  • Lettuce leaves (for serving)

Instructions:

  1. Cook the Lentils:

    • Place the lentils in a pot, add water, and bring to a boil.
    • Cook the lentils until they are soft and have absorbed most of the water, about 15-20 minutes.
    • Add the fine bulgur to the cooked lentils, stir, and cover the pot. Let it sit for the bulgur to absorb the remaining moisture and swell.
  2. Sauté the Onion:

    • In a separate pan, heat the olive oil and add the finely chopped onion.
    • Sauté the onion until it becomes golden brown.
    • Add the tomato paste and pepper paste, and cook for a few more minutes.
  3. Mix Ingredients:

    • Add the sautéed onion and paste mixture to the lentil and bulgur mixture.
    • Add the finely chopped green onions, parsley, cumin, black pepper, red pepper flakes, and salt.
    • Mix and knead the mixture well until everything is combined and the flavors meld together.
  4. Shape the Koftes:

    • Take small portions of the mixture and shape them into small oval patties.
    • Place the koftes on a serving plate.
  5. Serve:

    • Serve the lentil koftes with lemon wedges and lettuce leaves.
    • Enjoy your meal!
